The Association for the protection of the Capon of San Damiano d’Asti was born in 2009 thanks to the collaboration between the Municipality of San Damiano d’Asti, Coldiretti and some producers who for years have dedicated themselves to keeping alive a tradition that has always characterized San Damiano d’Asti, so much so as to have an ancient Historical Fair held every year in December, before the Christmas holidays.
Through a strict regulation, the Association’s goal is to give better visibility on the market to this qualified production, also organizing and promoting the economical aspects of this business.
The quality of the production, fundamental to face the market in the best way and which increasingly requires traceability and naturalness of this type of quality food, requires “ground” breeding and capon feeding control, according to the rules of the best animal welfare and based on centuries-old traditions.
